Millet Quinoa Salad

Ingredients
- 3/4 Cup Millet
- 3/4 Cup Quinoa
- 2 1/2 Cups Water
- 1/4 tsp Sea Salt
- 1 1/2 Cups Frozen Corn
- *
- 1/4 Cup Olive Oil
- 1 1/2 Tbsp Lemon Juice
- 1/2 Tbsp Sea Salt
- 1-2 Garlic Cloves, crushed
- 2 tsp Stoneground Mustard
- 1/4 Cup Red Onion, minced
- 1 Carrot, peeled & grated
- 1/2 Bunch Fresh Parsley
- 1/4 Bunch Scallion, chopped
Instructions
- 1. Wash Millet & Quinoa in mesh strainer. Drain.
- 2. Heat water and sea salt to boiling.
- 3. Add grains to boiling water. Add corn.
- 4. Turn to low and simmer, covered, 15-17 minutes, or until liquid evaporates. Do not stir.
- 5. Remove from heat and let stand for 5 minutes.
- 6. Turn onto sheet pan, and cool.
- 7. For the Dressing:
- 8. Whisk together all ingredients. Adjust to your liking.
- 9. Mix cooled grains, vegetables, and herbs. Serve on beds of lettuce.
