Millet Quinoa Salad

Ingredients

  • 3/4 Cup Millet
  • 3/4 Cup Quinoa
  • 2 1/2 Cups Water
  • 1/4 tsp Sea Salt
  • 1 1/2 Cups Frozen Corn
  • *
  • 1/4 Cup Olive Oil
  • 1 1/2 Tbsp Lemon Juice
  • 1/2 Tbsp Sea Salt
  • 1-2 Garlic Cloves, crushed
  • 2 tsp Stoneground Mustard
  • 1/4 Cup Red Onion, minced
  • 1 Carrot, peeled & grated
  • 1/2 Bunch Fresh Parsley
  • 1/4 Bunch Scallion, chopped

Instructions

  • 1. Wash Millet & Quinoa in mesh strainer. Drain.
  • 2. Heat water and sea salt to boiling.
  • 3. Add grains to boiling water. Add corn.
  • 4. Turn to low and simmer, covered, 15-17 minutes, or until liquid evaporates. Do not stir.
  • 5. Remove from heat and let stand for 5 minutes.
  • 6. Turn onto sheet pan, and cool.
  • 7. For the Dressing:
  • 8. Whisk together all ingredients. Adjust to your liking.
  • 9. Mix cooled grains, vegetables, and herbs. Serve on beds of lettuce.
