Warming Lentil Soup

Lentils are a powerhouse of nutrition. They are high in fiber including soluble fiber. Intake of soluble fiber lowers the risk of diabetes, constipation and heart disease.1 Lentils digest slowly which helps keep blood sugar levels steady and helps you to stay full longer.  They are a rich source of folate, B vitamins, iron, and protein.  All that and naturally low in sodium too.

Unlike many other dried beans, lentils do not require pre-soaking and can be cooked right out of the package (after a quick rinse that is.)  They make a great item to have on hand in your pantry since they keep for up to two years.  But don’t keep them that long!  Eat them regularly.  This recipe is a great way to start.  The ingredients are likely items you have on hand and the chili powder in this recipe gives it a spicy warmness that makes it a great match for a cold day.  Break out the lentils and let it snow.

Ingredients

  • 1 Onion, diced
  • 2 Tbsp Olive Oil
  • 2 tsp Chili Powder
  • 1/2 tsp Dried Thyme
  • 1/2 tsp Sea Salt
  • 1 1/4 Cups Dried Lentils, rinsed
  • 5 Cups Water
  • 1 Can (8 oz) Tomato Sauce
  • 3 Carrots, chopped
  • 3 Stalks Celery, chopped
  • 2 Cloves Garlic
  • 1/2 Cup Chopped Parsley

Instructions

  • 1. Sauté onion in olive oil over medium heat until golden.
  • 2. Stir in chili powder, thyme, and salt.
  • 3. Add lentils and water. Bring to a boil, then reduce heat to medium and simmer for 15 minutes.
  • 4. Add garlic, carrots, celery, and tomato sauce. Simmer for another 15 minutes.
  • 5. Stir in parsley and add black pepper to taste.
  • Servings : 8
  • Ready in : 30
