Spicy Black Bean Salad

Ingredients
- 2 cloves garlic, crushed and chopped
- 2 cans black beans, rinsed and drained
- 1 bag frozen corn, thawed, OR fresh corn in season, 3-4 cups
- 6-8 scallions, chopped
- 1 red pepper, diced small
- 1-2 hot peppers, diced small (to taste)
- 2-4 limes, juiced (to taste)
- Salt (to taste)
- 1 large handful cilantro, chopped
- 1 tsp. olive oil
- 1 avocado, chopped prior to serving
Instructions
- 1. Prepare ingredients as indicated and combine in a large bowl.
- 2. Toss to combine ingredients.
- 3. Taste and adjust seasonings accordingly.
- 4. Chop and add avocado just before serving.
