Spicy Black Bean Salad

Ingredients

  • 2 cloves garlic, crushed and chopped
  • 2 cans black beans, rinsed and drained
  • 1 bag frozen corn, thawed, OR fresh corn in season, 3-4 cups
  • 6-8 scallions, chopped
  • 1 red pepper, diced small
  • 1-2 hot peppers, diced small (to taste)
  • 2-4 limes, juiced (to taste)
  • Salt (to taste)
  • 1 large handful cilantro, chopped
  • 1 tsp. olive oil
  • 1 avocado, chopped prior to serving

Instructions

  • 1. Prepare ingredients as indicated and combine in a large bowl.
  • 2. Toss to combine ingredients.
  • 3. Taste and adjust seasonings accordingly.
  • 4. Chop and add avocado just before serving.
  • Servings : 4
  • Ready in : 15
