Black Bean Sweet Potato Quesadillas

Ingredients
- 1 - 15oz can black beans, rinsed
- 1 cup shredded cheese (cheddar, jack, or Mexican blend)
- 1 cup mashed, cooked sweet potato
- 1/2 cup chopped fresh cilantro
- 4 - 8'' to 10'' whole-wheat tortillas
Instructions
- 1. Place tortillas on a work surface
- 2. Spread 1/4 cup sweet potato on half of each tortilla
- 3. Scatter beans, cheese, cilantro on top of sweet potato
- 4. Fold tortillas in half, gently pressing to flatten.
- 5. Heat 1 teaspoon oil in a large skillet over medium heat.
- 6. Add quesadilla to pan and cook, turning once, until golden brown on both sides (2-4 min total).
- 7. Repeat with the remaining quesadillas. Serve with avocado and salsa.
