Black Bean Sweet Potato Quesadillas

Ingredients

  • 1 - 15oz can black beans, rinsed
  • 1 cup shredded cheese (cheddar, jack, or Mexican blend)
  • 1 cup mashed, cooked sweet potato
  • 1/2 cup chopped fresh cilantro
  • 4 - 8'' to 10'' whole-wheat tortillas

Instructions

  • 1. Place tortillas on a work surface
  • 2. Spread 1/4 cup sweet potato on half of each tortilla
  • 3. Scatter beans, cheese, cilantro on top of sweet potato
  • 4. Fold tortillas in half, gently pressing to flatten.
  • 5. Heat 1 teaspoon oil in a large skillet over medium heat.
  • 6. Add quesadilla to pan and cook, turning once, until golden brown on both sides (2-4 min total).
  • 7. Repeat with the remaining quesadillas. Serve with avocado and salsa.
