Oatmeal Chocolate Walnut Cookies

Ingredients
- 1 & 1/2 cups rolled oats, old-fashioned or thick-cut
- 1 cup whole wheat pastry flour
- 1/4 teaspoon sea salt
- 1/2 cup maple syrup
- 1/3 cup cold-pressed vegetable oil
- 1 teaspoon vanilla extract
- 1/3 cup chopped walnuts (or pecans)
- 1/4 cup semi-sweet chocolate chips
Instructions
- 1. Preheat oven to 350 degrees
- 2. Combine oats, flour, and salt together in a bowl. Set aside.
- 3. In a separate bowl, mix together sweetener, oil, and vanilla.
- 4. Add wet ingredients to dry mixture and mix well.
- 5. Stir in nuts and chips.
- 6. With moist hands, form dough into 2" cookies and place on a lightly oiled cookie sheet or one lined with parchment paper.
- 7. Bake for 15-16 minutes, until golden on edges.
